Ingredients:
• 1 large yellow onion
• 2 cloves garlic
• 1/4 cup olive oil
• 6-7 pieces of chicken Breast are best I think-tenderloins
• 1- 15 oz can tomato sauce
• 1- 15 oz can diced tomatoes
• 1/2 cup white wine
• 1 carton chicken broth
• 2 bay leaves
• 2 tablespoons basil
Directions:
• Sauté onions (half moons) in olive oil over medium heat in large skillet
• Add chicken - slightly brown both sides
• add garlic (minced), tomato sauce, diced tomatoes, broth, wine. Bring to boil. Reduce to simmer
• add bay leaves and basil, salt and pepper
• simmer with lid on for 30 minutes
Thicken with 3 tablespoons of cornstarch mixed in 1/4 cup of water (slurry)
Pour in and stir- simmer for 10 minutes.
Option- add mushrooms. Remove lid Simmer for 10 more minutes. Serve over rice or noodles
