Ingredients:
300 g flour (all purpose or bread)
3 g active dry yeast
4.5 g salt
210 g lukewarm water (can add a pinch of sugar)
Directions:
Combine flour and salt in a large bowl. In a separate bowl, add lukewarm water with a pinch of sugar and active dry yeast.
Let yeast activate for 10-15 minutes then add to dry ingredients.
Mixed until combined. Cover and let rise for 12-24 hours on the counter.
Move to the fridge for 3-5 days.
When ready to bake, remove the dough onto a floured surface. Knead and shape. Use a larger bowl with flour to help hold the shape, cover with kitchen towel. Let sit for 4-6 hours.
Pre-heat oven and dutch oven to 400 oF. Allow pan to properly heat at temp for 15-20 minutes.
Score dough with a sharp knife. Place in the cast iron pan and bake for 20 minutes or until golden brown.
