Ingredients:
For 7 custard cups
3 eggs
½ cup sugar
⅛ tsp salt
2 cups milk
½ tsp vanilla
½ cup sugar to cook in pot
Directions:
Beat eggs with sugar and salt
Heat milk in pot until almost boiling but not yet bubbling
Stir slowly into egg mixture and add vanilla
Bake 40-45 minutes or until firm in oven at 350 degrees F
Ingredients:
For 4x 5x8 pan
20+ eggs
2 cups sugar
10 cups milk (1 gallon)
⅝ tsp salt
2 ½ tsp vanilla
⅓ cup sugar for each pan
Sous Vide:
Preheat sous vide bath to 82 degrees C.
Pour caramel to coat bottom of 2 oz mason jar. And allow to harden before proceeding
Pour flan mixture to fill jar, leave about 1/4" inch from top.
Place lid and hand tighten with two fingers, do not over tighten.
Place in sous vide for 1 hr.
